Catch of the Day (new recipe)

 

10     Potatoes, sliced

4        onions, sliced

1          Dried red chile, crumbled

2          pounds fresh Trout

cornmeal

       salt and pepper

       Oil for frying

 

 

Heat 2 tablespoons oil in large Dutch oven. Add sliced potatoes and onions in layers, sprinkle each layer with salt, pepper and chopped Chile. Cover and put in fire with coals over and under the pot and cook for 30 minutes or until potatoes are nearly done. Clean trout, heat 2 tbsp. onion in a skillet until hot. Roll fish in cornmeal, salt and pepper. Fry in hot oil until browned on both sides. Lay trout over potatoes in Dutch oven and cook for 10 more minutes. Serves 6-8.
