Jimmy’s Potatoes

The following recipe is one of the quickest and easiest ways to cook a meal while out camping. My brother Jimmy Horn showed it to me a few years ago using just the potatoes and over the past few years I have kind of added to it. You can also use more potatoes and then used what ever is left the next morning. Take left over potatoes add eggs and fry up and roll in a flour tortilla for a great breakfast burrito.

6            large potatoes (Peeled and sliced)

1            large onion (diced)

1            can of sliced mushrooms

˝           cup of butter or margarine

1            kielbasa   sausage (cut into 2 inch chunks)

1            can of green chilies

                    Salt and pepper to taste

                   Aluminum foil (large)

Cut foil in to two sections about 18 inches long. Take 1 large spoon full of butter and spread on first section of foil, spread ˝ of the potatoes over butter, add diced onion, mushrooms, sausage, chilies add rest of potatoes and salt and pepper to taste. Add rest of butter. Take 2^nd sheet of foil and lay on top fold over edges of both sheets to make an air tight seal. Lay on grill over hot coals turning over every 10 mins for about 30 mins total. Serves 6
