Simple, Delicious Fish Dinner

Sometimes the easiest meals are the best, and this recipe for fish and
mashed potatoes is a good example. This is a slight variation on a recipe
most of you have probably used at one time or another.
Iıve tried this recipe with walleye and northern pike, and itıs
wonderful. Iım guessing it would work with a lot of other species as well.
The key to this recipe isnıt as much in the ingredients as in the process.
Itıs important to remove the lateral line from a bigger fish. I also
like to cut the thicker pieces of meat lengthwise yielding thin pieces.
Wash the pieces of fish thoroughly, pat dry and season liberally with:
Salt and pepper
Lemon pepper
In a food processor or blender, grind a bag of saltines and a couple
cups of cornflakes for breading. If youıre into Cajun cooking, you can add
Cajun seasoning to the crumbs.
Next, boil potatoes along with one clove of garlic for every potato.
When the potatoes are about half done, start the fish. In a large,
nonstick skillet over very low heat, combine half a cup each of olive oil
and butter.
In a bowl, prepare an egg wash using one egg and a small amount of milk
or water.
Dip the fish in the egg wash, shake off the excess and dust with the
breading mix. When the oil and butter are sizzling, lay the fish in the
pan, frying slowly on low heat until golden brown on one side. Flip the
pieces and brown on the other side.
When the fish is done, sprinkle each piece with dill (preferably fresh),
remove to a (oven safe) plate and place in a 190-degree oven until ready to
serve. I think the oven time (5 minutes or longer) intensifies the flavor.
When the potatoes are done, mash with butter, heavy cream, salt and
pepper and fresh chopped parsley.
Place a generous scoop of mashed potatoes in the middle of a plate and
surround the mound with pieces of fish. Drizzle a little lemon juice on top
and serve with a good Riesling wine.
